i am currently doing this and the available info is slim to say the least. The install DVD is literaly a running version of OSX. When you tell it to install it runs an installation script which tell it which options you have made where the install files are located on the dvd. Best suggestion I can give is have a good poke round the install dvd make an image of it and go from there. Oh and also tell OSX to show all files in terminal or you wont see much.

The old Mac OS had a finder you booted into off the cd. It was really handy in recovering a botched system back then and would be now, especially for us.

In the folder Applications/Utilities/ are the tools which can be started in the 'Utilities' menu of the installer dvd. Why not copying the Finder from CoreServices to this directory? Maybe it will be listed in the Utilities menu.

And renaming Finder to another tool, f.e. Startvolume? We don't need this on our machines.
