However, I use zephy's release and it seems to work fine, even after about 10 hours of uptime.

I can not use the latest AppleSMBIOS.kext either, it will crash my About This Mac just like yours.

Hence I have always been using the old version which works fine.

I can't confirm stuttering problems, just updated to the latest QuickTime and watched a BBC Motion Gallery 720p HD movie.

Everything seemed to work fine.
